About Vegetable curry (vegetable kurma):

Vegetable curry is very common Indian food, in a vegetarian family this dish is generally cooked at least once a week. Vegetable kurma is a very healthy food and good on proteins and very low on calories. Even in this recipe health has been kept high on priority. The more the vegetables you add the more tasty it will become. Paneer is again a optional thingy for some reason if you do not like paneer you can leave that out. This curry goes well with parantas, naans, roti or even plain white rice (but you may require rasam). This recipe should serve 4. Ingredients for vegetable curry:

Oil – 2 tbsp
Cashew – 2 tbsp broken into pieces
Golden raisins – 1 tbsp
Bay leaf – 1
Cinnamon stick – 1 inch piece
Green cardamom – 3 or 4
Cloves – 7 or 8
White peppercorns – 1/4 tsp
Broken cashews – 1/4 cup
Onion – 2 medium sized finely chopped
Salt – as per taste
Ginger – 2 tbsp chopped
Garlic – 2 tbsp chopped
Green chilies – 2 to 3 chilies finely chopped
Cumin powder – 1/2 tbsp
Coriander powder – 1 tbsp
Red chili powder – 1 tsp
Turmeric powder – 1/2 tsp
Evaporated milk – 5 oz (alternate: normal milk)
Yogurt – 1/2 cup
Paneer – cubed 7 oz
Tomato – 1 large cubed
Carrot – 2 medium sized cubed
Cauliflower – 2 cup cut to bite sized florets
Potatoes – 2 medium sized cubed
Green peas – 1 cup frozen
Green beans – 1 cup cut to 1 inch pieces
Cilantro – 1/2 cup finely chopped
Water – 2 cups

Cooking method of Vegetable curry:

Turn on stove and put in medium heat
Place a deep pan
Add oil and heat it
Fry cashews (1/4 cup) and raisins
After roasting lightly take cashew and raisins out
In same oil add bay leaf, cinnamon stick, whole green cardamom, whole cloves, and white peppercorns
After quick roast of above add cashews (2 tbsp) and fry for some more time
Now add onion, salt, and turmeric powder
Now close the lid tightly

While the onion is getting cooked,
Take a microwave bowl and add cauliflower, green peas, carrot, and some salt
(Tip: different vegetables take different amount of time to get cooked and they require different amount of water so they should be cooked separately)
(Tip: salt should be added early so that it gets well mixed with vegetables)
Mix vegetables and add 1/2 cup of water
Close the bowl and keep in microwave for 3 and then stir and keep it back for another 2 minutes (ensure vegetables does not becomes like paste)

After keeping vegetables in microwave get back to onion and add ginger, garlic and green chilies and mix well and leave it for another couple of minutes
Once the onion color turns to dark brown turn off the stove and let onion cool down

Now remove vegetables from microwave and transfer them in some normal bowl
Then in the same microwave bowl add potatoes, some salt and 1/4 cup of water
Close the bowl and keep in microwave for 3 and then stir and keep it back for another 2 minutes (ensure potatoes does not becomes like paste)
After 5 minutes remove potatoes from microwave and transfer them in some normal bowl
Then in the same microwave bowl add green beans, some salt and 1/4 cup water
Close the bowl and keep in microwave for 3 and then stir and keep it back for another 2 minutes (ensure green beans does not becomes like paste)

While your green beans are getting cooked in microwave, grind onion with 1/4 cup water (the complete stuff along with the whole spices) such that it becomes paste
Now again turn on the stove on medium heat and on the same pan add this paste and stir it constantly so that it does not burns
After a minute of stirring add cumin powder, coriander powder, red chili powder and mix further
Add 1/4 cup water and stir till the water is completely dried up
Now add paneer, tomatoes, green peas and cook for 2 minutes
Now add evaporated milk (if you do not get evaporated milk normal milk can be used)
Cook for another minute and set the stove to low
Now add yogurt while continuously mixing and then cook for another 2 minutes
Now add all our already cooked vegetables and mix well
Now close lid and cook for another 5 minutes
Now open the lid and mix again and turn off the stove
Finally add cilantro and mix slightly
And to garnish add our already roasted cashews and raisins and mix slightly
The vegetable curry (kurma) is ready to serve.
