My previous vegetable curry recipe was slightly on the heavier side. This recipe is more suitable for daily kind of cooking. This dish is very easy to learn and cook. Takes some 40 minutes to get ready (out of which 30 you almost won’t have to do anything ;-) ). Vegetarians will surely appreciate this recipe. Ingredients of vegetable curry:

  • Cooking oil: 3 tsp
  • Garlic cloves: 4 to 5 (tip: garlic is very good for health, so if you do not hate its smell you can add 2 more)
  • Cumin seeds: 1/2 tsp
  • Onions: 2 tbsp chopped
  • Coriander powder: 1 1/2 tsp
  • Turmeric powder: 1 1/2 tsp
  • Green chilies: 2 tsp finely chopped
  • Ginger paste: 1 tsp (tip: ginger is another healthy ingredient, so if you do not hate its smell you can add 1 more tsp)

Method to cook this Indian vegetable curry:

  • In a pan add 3 tsp oil
  • Heat the oil till little bit of smoke starts coming
  • Turn the stove to low flame
  • Add the garlic cloves (tip: garlic cloves take more time to fry)
  • Fry the garlic cloves
  • Now add cumin seeds
  • And then Onions
  • Fry onions for half a minute or so (tip: fry till onions turn into light brown)
  • Add half a cup of water
  • Now add 1 1/2 tsp coriander powder
  • Add 1 1/2 tsp turmeric powder (health tip: turmeric powder is very good from health perspective, turmeric can kill cancer cells and that is one of the reason why you see this ingredient in many of my recipes)
  • Now add chopped green chilies
  • Fry for a minute or till everything turns into reddish brown
  • Add ginger paste
  • Stir for one more minute
  • Now your curry is ready so time to add vegetables
  • You can add vegetables of your choice, in this case I am adding cauliflower and potatoes
  • Turn the stove to medium flame and leave it for 30 minutes (stir occasionally)
  • Your vegetable curry is ready to serve!
